Грибной сезон близится к финалу и напоследок радует любителей тихой охоты осенним урожаем. Чтобы вместо удовольствия от сбора опят и лисичек не получить неприятности, важно помнить основные правила безопасности. Какие грибы нельзя собирать даже если они съедобные? Какие первые признаки отравления и что делать, если вы заметили их у себя или родных? На эти и другие вопросы ответила главный врач ИНВИТРО Надежда Подкорытова.

О чем нужно помнить людям, которые собрались за грибами?

Важно четко знать, какие грибы съедобные, а какие нет. И собирать нужно исключительно те, которые вы опознали, и уверены, что они съедобны. С одной оговоркой: грибы имеют осмотрофный тип питания, то есть они впитывают вещества из окружающей среды всей своей поверхностью, поглощая в том числе соли тяжелых металлов. Некоторые грибы могут повышать концентрацию вредных соединений (например, шампиньоны, опята осенние и др.). Собирать грибы желательно на расстоянии 500 метров от автомобильных дорог и в 2-3 километрах от сельскохозяйственных полей и различных промышленных, производственных объектов.

Какие могут быть последствия? Кому лучше отказаться от грибов совсем?

Наиболее распространенная проблема, с которой можно столкнуться — отравление. Оно может произойти при употреблении в пищу как ядовитых грибов (мухомор, ложный опёнок, бледная поганка, ложный шампиньон и т. д.), так и съедобных, но испортившихся грибов (заплесневелые, покрытые слизью, долго хранившиеся). Тяжесть отравления и сроки проявления первых симптомов зависят от количества вредных веществ, попавших в организм. При сильной слабости, приступах частой рвоты и диареи, следует обратиться за медицинской помощью. Для уточнения диагноза желательно сохранить грибы.

Полностью исключить грибы из рациона рекомендуется детям до 7 лет. Кроме того, грибы нежелательно употреблять людям с заболеваниями желудочно-кишечного тракта, почек, печени или имеющими диагноз язва, гастрит (даже в ремиссии). Дело в том, что грибы содержат большое количество хитина, который плохо усваивается и дает нагрузку на органы пищеварения

Сколько грибов можно съесть?

Если нет противопоказаний, то взрослому здоровому человеку в норме можно употреблять по 50-100 граммов грибов в день. В этом случае грибы пойдут на пользу, так как они не содержат жиров, обладают низкой калорийностью и являются источником полезного белка.
